This is a great way to monitor the temperature of your refrigeration units. This container of water sits in the unit 24/7. When daily temperature checks are performed, you place your thin-tipped thermometer in the water for an accurate read of the unit. This tends to be much easier than trying to read those small hanging air thermometers, which half the time cannot be located in the units. I have heard only positive feedback from food services who have tried this.
