This quart container is filled water and stays in the unit 24/7. There is a slit in the top of the lid, for easy access to insert your thermometer. A set-up like this can provide you with a solid temperature baseline for the unit. Additionally, when all cooks are using the same products to check temperatures you create more consistent and accurate record keeping.
A red fluid thermometer are standard for most refrigerator but they can fluctuate with air temperature. This is a great back-up.
