Now those are pasteurized eggs! Many times I ask if pasteurized eggs are used and get a ‘Yeah, I think so.’ response. As you can see it is really easy to tell the difference. All pasteurized eggs I have come across commercially are stamped individually.


What's the beauty of a pasteurized egg? This facility makes Caesar salads table side, with the traditional egg yolk. The first benefit is that the risk of salmonella is eliminated. Secondly, the waiter making the salad table-side is nw not required to run to a hand washing sink, mid salad, and wash their hands before proceeding with the ready-to-eat (RTE) food item.


Pasteurized eggs are more commonly found premixed and in a carton.
