What's wrong with this picture? April 2024

These are actual photographs from different inspections in our county. Can you see what the problems are?


1. ↓ Cooked breakfast meats being held warm next to the grill. OK?



2. ↓ is a bit more unusual. What are your thoughts?



3. ↓ Same violation ... three ways. What do you see?



4. ↓ Self-serve cut fruits. What's missing?

Answers:






1. These meats and potatoes to the right, were cooked prior to service and were held out of temperature. This is acceptable only if you have them on a time-as-a control agreement and written protocol onsite.












2. Sprayer's hose is too long. If there is a water main break, or a fire where the fire department is sucking a lot of water from the city's system, you can actually get a backflow of the freshwater. 

The solution is to shorten the hose and maybe replace the spring.  (In this case, they shortened the hose and it hung about a 1/3 inch into the tray below still.  So, I asked them to invert the spring because one side of the spring was worn out, and the other side was fine.  This fixed the situation.)


3.2-401.11 Eating, Drinking, or Using Tobacco. (A) Except as specified in ¶ (B) of this section, an employee shall eat, drink, or use any form of tobacco only in designated areas where the contamination of exposed food; clean equipment, utensils, and linens; unwrapped single-service and single use articles; or other items needing protection can not result.Pf


Photos 1 and 3 show employees' eating meals in the kitchen. They were both eating between customers. Photo 2 is an improper drinking vessel, no handle or straw, in the kitchen area next to the rice paddle. Check out Fact Sheet #28 on acceptable Employee Drinking Cups.

5. Mis-use of sinks.

  1. True food prep sink with chemical dispenser.  The sink was indirectly connected to the sewer with a floor sink for the open pipe below.  Both sinks were marked as food prep sinks, and the chemical dispenser was mounted on top of the food prep sink sticker.

  2. Blocked handwashing sink.

  3. Prep sink, turned handwashing sink, and prep sink. Handwashing stickers, dispensers and soaps removed. It is now a prep sink again.
