I wanted to know if I need a variance for soaking almonds for fresh “almond milk”. We soak them overnight in cold filtered water and then puree and strain them for the milk. Is this OK?

Thanks for the question. Soaking almonds overnight in cold water is not considered sprouting a seed or legume so you do not need a variance. It is recommended that during the process, soaking to the strained, to finished product, be done under refrigeration, 41F or less.
