Q & A - Hot Holding Temperatures?

Q - What is the optimal temperature to serve hot food?

A - The temperature danger zone is between 41F and 135F, so we stay clear of those temperatures. When reheating food for hot holding on a steam table, you need to reheat to 165F for 15 seconds or more and then the food must be held at 135F or greater. If you are heating food for immediate consumption it can be whatever temperature you like. I think that covers it! Let me know if you need more.
