Q & A - Kombucha - Can we make and sell it?

I am inquiring about if it is legal to make and serve Kombucha in our bar.

Thanks for the question before you started the process! If all the ingredients are non-potentially hazardous, the facility is allowed to make and serve Kombucha on-site. If the facility plans to hermetically seal it in a container, they need a variance. If Kombucha is purchased in sealed containers (bottled or canned), it must be from an approved source. The product label must be in English, and include a list of ingredients, quantity of product, name and location of producer.
