Good To Know - Cooked Garlic in Olive Oil

I found this being used for brushing sandwich rolls before being grilled. They kept this out for service (4 - 6 hours) and then put it back in the refrigerator. There was no date stamp and the PIC had no idea how long they had been pulling this in and out of temperature.

As you probably guessed, cooked garlic in oil would most definitely need to be held under temperature control or on a timing agreement, not to exceed 4 hours.
